Our Beef graze on and around the fells of ingleborough, also in the Yorkshire dales. selected by the farmers Bill Whitaker of Whaitber farm ( whose beef is part of the limestone project) & John Metcalfe, Manor Farm, Ingleton to meet our specfitic requirements. The beef is then hung for 21 days minimum ensuring a tenderness only found at traditional butchers.
